Perch, Lake Victoria Lates nilotica Nile Perch Lake Victoria perch is a freshwater fish found in Central Africa's lakes and rivers. Lake Victoria in Africa has 2000 miles of shoreline and is approximately the size of South Carolina and claims the largest population in Central Africa. Reaching a length of 6 feet and a weight of 300 pounds the Lake Victoria Perch was introduced into lake Victoria by the British in the 1960's, within 25 years this carnivorous fish decimated some 350 species of native fish. The perch have been introduced to many of Africa's man made lakes and reservoirs and in many parts of Africa it is considered the single most important food fish. The Kenya government estimates that 1 billion pounds of this fish can be harvested per year and the resource will remain at sustainable levels. The white flesh has a delicate, mild flavor and the fillets are noted for their meaty steak-like qualities.
Freshwater fish are subject to parasites and should be thoroughly cooked or frozen at 0 degrees for 24 hours to avoid problems.
